Ferrous gluconate dihydrate is a brown crystalline solid. It can dissolve in water, forming a brown solution. In high humidity environments, this compound can absorb moisture and lose crystalline water. Ferrous gluconate dihydrate is a relatively stable compound, but it may decompose under acidic conditions.
Application:
It is effectively used in the treatment of hypochromic anemia. And also used as a food additive when processing black olives.

Ferrous gluconate can be used as a color protectant for pickled vegetables (olives only), with a maximum usage of 0.15g/kg.
